IN CAMPECHE IN SONORA

THIS IS THE MOST REPRESENTATIVE BIRD OF THE SOUTHEAST, IT IS NATIVE TO THE STATE OF CAMPECHE, QUINTANA ROO, BELIZE AND GUATEMALA (IT ONLY EXISTS IN THIS PART OF THE AMERICAN CONTINENT AND OF THE WORLD).

 

SO FAR, NOBODY HAS BEEN ABLE TO REPRODUCE IT IN CAPTIVITY IN A SUSTAINABLE WAY FOR EITHER HARVESTING OR HUNTING.

 

IT IS A SPECTACULAR ANIMAL WITH IRIDISCENT FEATHERS THROUGOUT THE RAINBOW COLORS, WITH AN IMPRESSIVE BRIGHTNESS.

 

HE FEATURES A HEAD THAT IS TURQOUISE BLUE WITH RED, YELLOW AND ORANGE COLORED DIMPLES AND A LONG PROTUBERANCE IN THE FOREHEAD THAT CAN MEASURE UP TO 7 CM (2.5 IN)

 

THE OCELLATED TURKEY PROUDLY WEARS SPURS THAT CAN BE AS LONG AS 8CM (3.0 IN) AND WITH VERY SHARP TIPS. AVERAGLE WEIGHT RANGES FROM 4 TO 6 KG (10 TO 14 LB) AND IT IS UNBELIEVABLE THAT WITH ITS SIZE AND WEIGHT CAN BE SO FAST TO FLY IN SECONDS THROUGH THE JUNGLE IF DISTURBED OR SRPRISED.

 

THERE ARE TWO SPECIES OF TURKEYS IN THE WORLD, THE MELEAGRIS GALLOPAVO AND THE MELEAGRIS OCELLATA. FIVE SUBSPICIES OF THE MELEAGRIS GALLOPAVO (GOULDS ,EASTERN, OSCEOLA, RIOGRANDE AND MERRIAMS ) ARE CONSIDERED, AND FROM THE MELEAGRIS OCELLATA ONLY THE OCELLATED IS KNOWN.

 

THIS TURKEY IS HIGLY TREASURED BY HUNTERS, SINCE IT IS PART OF THE GRAND ROYAL SLAM OF NORTH AMERICAN TURKEYS.

HUNTING SEASON IS OPENED FROM FEBRUARY THROUGH MAY,BUT IT IS NOT UNTIL APRIL TO MAY THAT GOBBLERS SING, MAKING THESE THE BEST MONTHS TO HUNT. THE SOUND OF THE SINGING IS TOTALLY DIFFERENT FROM THE COMMON TURKEYS, AND SO FAR NO CALL MANUFACTURER HAS BEEN ABLE TO IMITATE ITS CROWING.

 

IT´S MEAT IS WHITE AND WITH AN EXQUISITE FLAVOR AND TENDERNESS.
